Late Lunch Date (DIY)...

Have you ever been...
...Starving.
...Running behind.
...Craving TASTE.

Well, today I was all of the above.
Plus, I had my lil' sis (K.K.) over and I didn't want to disappoint.

Here's what was "whipped" up, super fast!

Iced mocha latter (stove top espresso makers are the best), with bendy straw for guaranteed smile.

My fave hummus EVER (scooped with TJ's organic unsalted corn chips)...

Fresh Strawberries & homemade chocolate whip cream!
(homemade whip cream is super easy. See recipe below)

Oh!
And sushi...via Trader Joe's...

For dessert...a tasty square of this...

We made it.
We ate it.
We even chatted over it.
All while the kids were down for afternoon quiet time. It was almost like having a girls lunch out!

To throw your own successful "wow" late lunch you'll need:
  • 2-4 premade foods
  • 1 fresh fruit or veggie
  • 1 fancy drink (premade izze's or homemade lattes)
  • 1 homemade item (keep it simple, like whip cream)
Keep the menu "light", remember this is a late lunch...all you need is enough to hold you over till dinner.
*A tip-try keeping pre-made items on hand...so that you have something to "grab" allowing you to host that last minute lunch.

Homemade Choc. Whip Cream (Tracey style):
1 pint heavy whipping cream
2 tsp. vanilla
1 tbsp. choc syrup
(I used all things Trader Joe's)

step 1-dump all ingredients into a bowl
step 2-whip on high with electric mixer until it peaks
step 3-DEVOUR

Don't want chocolate whip? Substitute the choc. for granulated sugar. Enjoy!
